Our Story
From Barcelona to Victor
DeWolf Brewing started with homebrewing, years spent in Barcelona and an idea for the kind of neighborhood brewery we wanted to come home to. Nearly four years of construction later, that idea found its home in a 130-year-old building in the heart of Victor.
How It Started
A Little Barcelona in Victor
Our story started long before we opened the doors in Victor. Justin grew up in nearby Phelps, then spent five years in Barcelona, where he started a homebrewing club and watched the city's small craft beer scene begin to grow.
Barcelona also shaped our idea of what a neighborhood brewery could be — a place woven into everyday life, where friends gather around a table, order a few things to share and stay awhile.
Mari, Justin's wife and a co-owner of DeWolf, is originally from Estonia and also spent five years living in Barcelona. Those shared experiences helped shape the brewery's Spanish influence.
Back home, Justin joined forces with longtime friend Jeremy Hevery, who became his business partner, and the idea for DeWolf began to take shape.
60 Maple Avenue
A Building Worth Saving
The building at 60 Maple Avenue dates to 1890. Sitting beside the railroad tracks and visible from Main Street, it spent generations serving Victor's agricultural community as a feed store and farm-supply business.
Starting over would have been easier. Instead, we spent nearly four years reinforcing, rebuilding and adapting the old structure for an entirely new life — fitting a working brewery, commercial kitchen, taproom and gathering space inside a building constructed more than a century ago.
DeWolf Brewing finally opened its doors in December 2025.

Meet the Team
The building gave DeWolf a home. These are some of the people who bring it to life every day.
General Manager
Tony Jarvis
A Victor native and longtime hospitality professional, Tony spent 20 years at Finger Lakes Gaming & Racetrack before joining DeWolf as General Manager.
He's also a serious craft beer fan, which makes running a brewery a pretty natural second act. His all-time favorite beer is Hill Farmstead Marie, a Helles lager. When he's not at DeWolf, you'll usually find Tony talking craft beer, Buffalo Bills or the gym.
Head Brewer
Zack Haggerty
Zack brings more than 12 years of professional brewing experience to DeWolf. His career started catching bottles at Pelican Brewing on the Oregon coast and eventually took him across the country to Maryland, where he co-founded 5th Company Brewing.
Family brought Zack back to the Rochester area and eventually to DeWolf, where he leads our brewing program with a particular love for clean lagers and crisp, hop-forward IPAs. With 20 taps and a 10-barrel brewhouse to work with, you'll usually find a mix of traditional styles, everyday favorites and whatever Zack decided we needed to brew next.
Chef
Jaciano
Jaciano brings 16 years of professional kitchen experience to DeWolf, including time as Sous Chef at Rochester Institute of Technology and Head Banquet Chef at Ravenwood Golf Club.
His Puerto Rican background influences both the flavors he gravitates toward and his belief that good food should bring people together. At DeWolf, he builds on our Spanish-inspired foundation with bold flavors, shareable dishes and food meant to be enjoyed around a table.
Opening the Doors
A Community Effort
Opening day brought together everyone who helped make DeWolf possible — family, friends, local officials, and the contractors and tradespeople who spent nearly four years turning an old feed store into a working brewery.
It was also the start of something bigger: getting to know the neighbors, regulars and first-time visitors who've made Victor feel like home ever since.
